We have really enjoyed having two friends to play with during the cold winter months but the hours are kind of sporadic and usually go until about 6pm.
By 6pm, after doing activities all day and finally getting to see the floor again, I just want sit on the couch and read books with my boys... but it's time for dinner. Dinner that I should be making.
'Lucky' for me, most of the time Devin is studying late on campus so the boys and I get to read and then make silly dinners (ie sandwiches, pancakes, ect).
One night we even made our own tortilla pizzas!
One round with cheese, and peperoni
and one with apples, craisens, and peanut butter
but the other night Devin was coming home- HOORRAY! and I had forgotten to plan something- oops! and that's when I found this:
It takes little, to no prep (just slicing), uses barely any dishes (9X13 and a small bowl), it's ready in 20 minutes!!! and it is SO GOOD!!!! Definitely a keeper!
Baked Chicken Fajitas
1 pound boneless, skinless chicken breasts, cut into strips
1 (15 oz) can diced tomatoes
1 (4 oz) can diced green chilies
1 medium onion, sliced
1 large bell pepper, seeded and sliced
2 T vegetable oil
2 t. chili powder
2 t. cumin
1/2 t. garlic powder
1/2 t. dried oregano
1/4 t. salt
12 flour tortillas, warmed to serve
Preheat the oven to 400 degrees. Grease a 13×9 baking dish. Mix together chicken, tomatoes, chilies, peppers, and onions in the dish.
In a small bowl combine the oil and spices. Drizzle the spice mixture over the chicken and toss to coat.
Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender.
I love all your recipes Lindsey. I also appreciate all the great ideas you share of things you do with Levi. You're such a great mom. I may steal some of these ideas for joy preschool. Do you do that? You should. You are so creative!
